Watermelon Cucumber Salad

Although summertime is over, it is still pretty warm in Loma Linda! Around this time of year, I find myself going to a lot more dinners with friends and family. My favorite thing to bring is this watermelon salad. Looking at the combination of ingredients it seems strange, but this watermelon salad is savory, acidic, sweet, and incredibly refreshing.
I’m sure you would like to hear all the great nutrition benefits that come with this salad. The two major components are watermelon and cucumber. Besides watermelon containing water for hydration, it also contains vit. A, C, B1, B5, B6, potassium and magnesium. Cucumbers help with hydration, a good source of fiber, and can be an antioxidant.
This recipe is very simple and will only take a few minutes. This recipe can last 2 days with full flavors still present.
Ingredients:
1 Medium size watermelon: Cubed
1 ½ cups of cubed cucumber
1 small red onion: diced
½ cup of cilantro chopped
1/3 cup of fresh parsley chopped
4 limes juiced
½ Tbsp sea salt or according to taste preference
1/3 of cotija cheese
Instructions:
Skin the watermelon and slice into small cubes
Leave skin on the cucumber and cut into cube similar in size to watermelon
In a large bowl combine watermelon, cucumber, cilantro, parsley, onions, lime juice, salt, and cotija.
Once it has been combined, cover and let rest in the refrigerator until cool. Then serve.
